Vegetarian building blocks
- Protein: organic tofu, or skip a "protein" entirely and lean on beans instead
- Beans: black beans or pinto beans add meaningful plant protein (7–8g per serving) and fiber
- Any base works: burrito, bowl, salad, tacos, or quesadilla are all vegetarian-compatible once the protein is swapped
- All toppings and sauces are vegetarian — cheese, sour cream, guacamole, salsas, and vegetable toppings
Boosting protein without meat
Tofu alone (8g protein) plus a scoop of beans (7–8g) gets a bowl to roughly 15–16g of protein before cheese or sour cream are even added — combine both rather than picking one.

Going fully vegan at Moe's
A vegan build is the vegetarian approach above with the dairy-based toppings removed. Organic tofu and beans are both plant-based, so the swap is straightforward:
- Skip shredded cheese, sour cream, and queso — all dairy-based
- Lean on guacamole and salsas instead for richness and flavor
- Tofu, beans, rice, and all the fresh vegetable toppings (pico, lettuce, tomatoes, peppers & onions, jalapeños) are vegan by default
The result is close to the vegetarian bowl above, just built with guacamole and salsa carrying the flavor instead of cheese and sour cream.
